When filling out a Homestead Declaration -Spouses as Declared Owners form, what information are we supposed to type in the blank at the end of the statement,We own the following interest in the above-declared homestead, --------------------

Your interest in the homestead is, 98% of the time, whatever your deed to the property says. Often, this will be a "fee simple absolute" or the like, and often there will be further description reflecting how title is held, such as "joint tenants" or "community property" which should perhaps be added.
Call me a visual person, but I had to look at the form to see what you are talking about. I agree with Mr. Whipple, in that blank you put information that describes your ownership in the property you are recording the homestead declaration for.
