my ex landlord did a final walk through of our last residence and returned my full deposit. Now two weeks later he wants me to pay for new carpet.

Having done a complete walk through and refunded your money, I would think he is estopped from demanding any payment form you unless he said the refund was subject to a later determination of damage or there was something he would not know about until later [stains looked as though they would come out, on cleaning could not be removed, etc.]. I assumed you have detrimentally relied upon his giving you the money by spending it, one of the requirements of an estoppel [means stopped from asserting something].
I could write him a letter explaining why he should drop it.
