can a seller cancel escrow, buyers already sold their home and will sign loan docs tomorrow.

Seller should not cancel escrow if they've signed an agreement and the buyer has performed all terms and conditions required. However, it depends on what the contract says. Sometimes it will contain a liquidated damages clause that allows for a limited amount of damages. You should consult an attorney and have them review your agreement.
