Will getting a lease notarized for my signature ensure me in anyway for the money that I will pay to the owner?

No. All notarization does is assure to a greater extent that the person who signed a document is the person the document says signed it. If anything, notarizing your signature is favorable to the landlord, not you, since it is a form of guarantee that you signed the lease and it is not your forged signature.
