I own a company which uses trucks for day to day driving etc. One of my trucks was hit by a driver making a left turn, totalling the truck. Police report puts the other party at fault. He had invalid insurance. How do I recover costs?

If you have collision insurance on your vehicle then collect from your insurance company. The driver of the other car is liable for the costs of repair including the deductible payment. However, collecting from the other driver may not be easy. Generally when a driver does not have insurance, they do not have any assets.
