Naming beneficiaries to a will.

Are there restrictions as to who may be named in a Will?

Nope. You could leave everything to your cat if you wanted. Just make sure that you have the will notorized and witnessed by two people so that if it is contested it will hold up in court. At the very least sign and date all copies and have at least one witness sign also.
