Probate Deed vs. Quit Claim Deed

We are attempting to get a property that is currently going through probate because our grandmother did not have a will. It has been agreed upon by the other siblings that the property will go to us, however we have to buy them out of their portion of the inheritance, can we have them quit claim the property to us, or do we need to have a probate deed? Is there a big difference between the two?
