what happens when you are never notified of any probate proceedings, intentionally left out?

Depends if you are a creditor or a beneficiary. If you are a creditor, you probably retain your rights. It depends on if the estate knew of you. If you are a beneficiary, it depends on whether a will was filed, whether you are related to the deceased and other factors.

If you know of the death you should check at the courthouse and appear as an intevenor.
