We have removed our daughter from our will for multiple reasons but we would like for her children / our grandchildren to receive her portion of our estate. How can we set that up?

You need to in the will intentionally disinherit your daughter first. Otherwise she would take her intestate shares regardless. Then you need to create a trust for your grandchildren that the trust property will pour over from the will. This is better handled by an attorney.

You can just have your will or trust state the share that the grandchildren are to receive, along with safeguards like a separate trustee or custodian if you're worried about her handling their will/trust gift as well.
