Legal Question in Wills and Trusts in California

I have been told that even with a will, you still have to go through probate. I have also been told that with an estate trust, probate can be avoided. Is this correct? Does an estate trust avoid probate?

Of course it has to be drafted and executed properly, and then completely funded with the assets.
