Legal Question in Wills and Trusts in California

How do my wife and I avoid probate. We want to leave all our estate to two grand children. One was adopted by us and the other we are guardians of. We have no one for an executor.

The simple answer is by establishing a trust. There are professional fiduciaries who can be trustee if you have no one to do the job. There are some other possible alternatives, depending on what property is in the estate, the age of the children, and your specific wishes.
