Legal Question in Workers Comp in California
My company wants to make me an officer so I will be exempt from workmans comp. What happens if I was to get hurt?

The only people who are not covered by WC are owners [probably also board of directors]; all employees of a company/business are by law to be covered. Management is excluded from the 40 hour work rules but not WC coverage. You can verify that by calling the businesses WC carrier and probably checking with underwriting.
