Sure you can take some action. The problem will be showing what "injury" you sustained from the plastic bits.
You have to write to the company first and tell them about the issue. Demand some compensation.
If that doesn't work, you have to get the coffee tested at a lab to prove the bits were actually in there in the first place.
Then file a lawsuit. I recommend small claims for this one. Chances are it would settle.
