Theft
My daugther recently took my laptop for the weekend to her dads - without my knowledege.
I own my own business and my accounting records were on there not only did he look at verything for hours a copy was taken of all the records - all banking info, employee data etc. - can I do anything?

Yes:
You should write him a letter confirming your understanding of what happened; and demanding the immediate return of any copies of this data and demanding that he permanently remove this data from his computer.
And put him on notice that if you suffer any loss or damage from his improper use of your data or intellectual property you will seek damages from him.
