i was attacked in a bar by a man with a broken buck of beer. he sliced my neck and i fell to the floor to my knees, breaking my left kneecap. what is the establiment responsable for?

Firstly, you would likely go after the man who actually attacked you in a civil action.
Secondly, you could sue the bar as well for "negligence" in failing to provide a safe environment. Do a few internet searches on the term "commercial host liability". This line of cases will give you ample examples of situations where a bar was held responsible for acts committed by intoxicated patrons.
I would suggest consulting with a local lawyer - especially if your injuries were quite serious and you have suffered financial loss (job related) as well.
