Canadian citizen in U.S.
My boyfriend and I are getting married in to weeks.
he's from Canada and has been here awhile. I'm from U.S. - how long is he allowed to stay here without a visa, and can he work with me as a volunteer? If so how long?

Even Canadians need work visas to work in the U.S. and stay longer than 90 days.
Once he marries a U.S. citizen, he could be denied entry to the U.S. until an immigrant visa is approved, which can take over 6 months. If he enters on a visa waiver, he should ask for proof of inspection by either getting his passport stamped at the border or receiving an I-94 card. Then he can file for adjustment of status after you are married.
The law is quite complex, so I suggest you both meet with an immigration attorney before getting married.
