Libel
A former employee is calling existng employees and telling them that my company engaged in illegal and unethical practices. Can I stop this.

This would be considered defamatory if, in fact, what the former employee is saying is false.
A statement is considered defamatory if 1) the statement is made to a third party, 2) the statement is untrue, and 3) the statement would bring ridicule or shed a negative light on the person against whom the defamation is leveled.
In a situation like this, it may be worthwhile to have a lawyer draft a "cease and desist" letter which threatens the employee that if he does not stop the comments, legal action will be taken.
