Changing business structure
I have registered my new S-Corp with the Secretary of State and filed for and received my EIN. I have not filed IRS form 2553 yet. Is it too late to change to an LLC?

No. If you have not made an election with the IRS, you may still elect LLC status assuming an LLC is what was chartered by the CO Secretary of State. Be sure you make the election promptly - preferably before you begin to do business under the LLC.
