LLC VS Incorporation
I'm starting a small booking business, is it best to make the business a LLC or Incorporate it so that I can write off the amount I pay for health insurance?

You can always write of insurance if you are a self-employed business person. Forming an entity has no affect on that tax write-off.
Now, there are various reasons to choose between an LLC or corp and if the corp or LLC should file for an S corp election.
You should talk to your accountant and retain a business attorney to advise you on contracts and legal issues.
