Estimate vs Bid?
I recently hired someone to finish a room. The estimate they gave me had a long list of materials needed for the job with the prices. Do I have the right to see the receipts for the materials bought for this job? This was not a lump bid but a broke down estimate with prices for the materials.
Please let me know. I need them for tax purposes.

I assume you have a contract. If this contract is cost-plus then they will have to show you the receipts for the materials (to prove the cost amount). If it is a fixed bid/contract, maybe not. In short, if the receipts were material to you, then you should have a contract that reflected that requirement.
If you have no contract or are not sure of the terms, ask them to provide you with receipts and in most cases they would provide them. It all depends.
