if at work and a manager has you write off store merchandise then takes it without you knowing what can you be charged with

I hope you have his or instructions to write off in writing.

It depends who as possession, custody and control and responsible for these items.

How do you know that after asking you to write-off the items the manager is the one who took the written-off items without your knowledge.

The Manager could be charged possibly with Theft if he or she was not authorized to take the items.
