My friend is going to take me to court for about $700. What does she need to win and what do I need to show I don't owe her money? If she wins how will I pay if I don't have the money?

You must mean your former friend: friends don't take friends to court. She needs to prove to about a 51 percent certainty that you owe her the money. You need to stop her from getting that far. If she wins and you don't have the money, she can wait till you do, and then sue for the judgment.
If you are really friends, and you really owe her the money, maybe you guys can sit down and see whether you think your friendship is worth $700, or at least maintaining while you slowly pay her off, since that's what you'd have to do anyway if she won a lawsuit (but then you won't be friends, I promise you).
