Can I have the father of my grandchild deleted from the birth certificate (he has no problem with it) and add the babies aunt as a legal guardian?

Legal guardian and parentage on a birth certificate are not one in the same. The father's name can not be remove from the birth certificate by agreement. However, if the baby's aunt wants to be legal guardian and the parents and present legal guardians agree, then that can be done in Probate Court.
