How do I add my fiance to my mortgage after I have bought a piece of property? Is there a certain contract that must be drafted to show her as an owner?

You don't want to add her to the mortgage, you want to add her to the title and you do that by way of a quit claim deed. (But think that one over REALLY, REALLY carefully. Once she's an owner you can't take her off title without her agreement.)
