we recorded a will in Arizona when our children were young. How can we update it and does it have to be re-recorded?

Wills are not recorded. You can execute a codicil to the will or draft a new will and destroy the old one. You keep the original and give a copy to a loved one or just keep it in safe place. Usually the lawyer who drafts the will keeps a copy as well.
