How Do I Answer A Complaint (Being Sued)

I am being sued by a former ''employer''. I need to answer the complaint with the court. There are seven counts with a total of 62 numbered complaints (many many repeats).

Do I list ''Number 1: Denied, Number 2''? Also, do I put other information ''Denied becuase I have the original paperwork that clearly....'' or do I not want to give too much info at this point.

Finally, I may want to countersue - do I have to make that known now or can I do that after I find an attorney?

Please, retain an attorney immediately! Yes, it is possible to respond to each numbered paragraph with "Denied", "Admit" or even "Admit X and Y but Deny the rest". However, there are valid defenses to any complaint that are forever lost if not properly set forth in your answer. This can be the difference between winning or losing.
