Are email and/or fax signatures legal on business documents
such as credit card transaction acknowlegements?

Yes, both Federal law and FL law accept e-signatures as legal. However, if the signature is forged, the person whose name was used did not enter into a contract and may not be bound by it. If the signature is legitimate, the contract is equally as legitimate as if there was a pen and ink signature.
Certain companies, such as credit companies or banks, may have their own policies regarding e-signatures. If a company wants to require an original signature, there is nothing in the law that tells them they can't require it.
