Legal Question in Business Law in Florida
Money owed from nightclub
For two years I have worked at an illegitimately run nightclub. No employee is paid hourly nor is it run with any sense of legitimacy on the business end. They made an agreement with me to pay a percentage (5%) of my personal sales but the manager has refused to pay me over the past year and the amount has accrued to over $2,000. Do I have any legal recourse and if so who would I have it against, the manager (whom I think may have been stealing it) or the club owners?

If you do not agree, then stop right here, and do not read any further.
You have not given many facts upon which to respond. You may have a violations of labor laws in the State of Florida. An employment lawyer can review the facts and let you know.
Alternatively, you may have a claim in small claims court (summary procedure) for breach of an oral agreement. Generally, the agreement must be performed in less than one year but it can be argued that each day you worked was a separate agreement and thus it is an enforceable agreement.
I suggest you consult an attorney who can review the specifics of the matter and let you know your legal rights and obligations.

You can try small claims, possibly. You will have a stronger case if you have a written agreement. Find a job where they don't cheat and steal because the boss would probably be the last person to get in trouble for what they have you doing.
