If I quit a job suddenly, is the employer required to mail the paycheck to me? Can they force me to pick it up in person? Are they required to give it to a 3rd party if I tell them to do so?

They should mail the check to you, but I don't think they are required to by law. Perhaps you could send them a self addressed stamped envelope for them to send it to you. They do not have to (and should not) give your check to a third party, even at your request.
I understand that you do not want to go pick-up the check in person. If the reason is that there is some "bad blood" there, and you either don't want to see the people or fear that some adversarial situation could arise, then you should definitely not go in person to pick-up your check. I suggest sending the SASE for them to send the check to you.
