Depends on the terms of the contract. If the contract does not address this item, you can cancel but you will likely loose your deposit. Once work begins you can still terminate but you would be liable to pay the contractor the work they have performed and/or any material delivered to the site. There is no 3 day grace period like in buying a new car or home.
