Legal Question in Credit and Debt Law in Florida

I am 57, wife is 56, she has been disabled for 12 years on mental issues, diagonosed with spontainious conpulsaury disorder, bi polar, fibromialga. She gets credit cards, runs up a large balance before I can find out and cancel the card. The firs time was 28k, then 19k, 13k, 8k, and now 3,200. I really think she has some dimminished ability to tell the diferiance between right and wrong. We went chapter seven on the 28k, as well as some of my mess left over from my first marrage. I have paid for the rest. How can I keep her from getting more cards in her name and I have recently heard I might not be responsible for her cards.
