In hiring a ghost writer she had me send her all of what I had already written, my DVD's, tapes, CD's of my business success tatics and said that she must interview me before she decided to a contract. After 3 hours of questions she has decided to write my business 'how to' herself using my tools. Will not give back recorded interviews or tools.

You should have had an attorney draft a non disclosure agreement and have it signed before you disclosed any information to her. Now, you have a much harder task of proving the materials and information are yours and proprietary. You should retain an attorney immediately to write a cease and desist letter to try to stop this in its infancy stage. Litigation later will be far more costly.
