If I'm serve with arbitration papers and I dont go, can they take me to court?

The arbitration process will move forward without you. The arbitrator will likely find the creditor's claim to be valid and make an award in favor of the creditor, which the creditor will then take to Court to confirm.
Once the Court has confirmed the award, it's a judgment, just as if you had gone to Court.
You do yourself no favors by pretending an arbitration is not a serious matter.
