If I admit to stealing an item from someone in an email can it be used against me in court?

Probably, but it would depend upon the specifics. That you did it in an email would not matter; admissions like this are usually admissible regardless of how they are made.

The prosecutor(s) would need to present evidence that 1. it was indeed you who wrote the email and 2. as it is a written document, there are certain standards that must be met before it is admitted into evidence. That being said, # 2 is not a hard burden but # 1 will be difficult unless you decide to volunteer the fact that you wrote the email....
