if someone is busted on a sex sting ring traveling to meet minor and its a second degree felony and a third degree felony for solicitation of a minor will they have to serve time if they plead not guilty and 11 law enforcement have given their depesitions

They will only serve time if they are convicted. The person is presumed innocent. The person can give up that right and enter a plea of guilty or no contest but it is entirely possible that the plea agreement will include jail or prison. These charges "score" prison on a scoresheet per the Florida Sentencing Guidelines. If they go to trial then they could be found guilty or not guilty, and if they are found guilty then they will likely have prison associated with the sentence.
