I was caught shoplifting 40 dollar headphones they made me sign a paper but I was not arrested what will happen to me

You likely were provided with a Notice to Appear. Even if you don't have handcuffs slapped on, there wil likely be prosecution for Petit Theft Under $100, a second degree misdemeanor, provided that you have never previously been convicted of theft. If you do have prior theft convictions, the petit theft can be enhanced to a first degree misdemeanor or a third degree felony, depending upon how many priors. IF you are prosecuted with the second degree misdemeanor, the maximum punishment is either 60 days in jail or 6 months probation.
Your first court date will be your arraignment, at which point you will be able to enter a plea of not guilty, guilty, or no contest. You should consult an attorney prior to pleading guilty or no contest. There may be an offer from the State at the arraignment but there is no guarantee.
