If my ex-girlfriend attacked me in my car and I defended myself and kicked her out of the vehicle, can she have me arrested for assault? The entire episode happened in the vehicle with no other people.

No other people around is irrelevant. Yes you can be charged but you can assert self-defense. I strongly suggest you talk to an attorney right away before this gets out of control.
