Are there any motions to file that prevent the state from putting its own spin on something one says in their statement?

Not really..
The documents that the state will present against the Defendant will always be written with the hopes of sustaining a conviction.
As far as the statements within those documents; you will be able to cross examine the people who gave the statements in hopes of revealing the truth.
The good news is that the attorney for the defendant will be able to put forward information favorable to the defense and he or she will be able to impeach a witness who is not telling the truth.
