If I inadverdantly provoke someone (for example cut someone off in traffic) and they assault me, can I legally use force to defend myself?

Yes, though the force you use must be reasonable to defend yourself from the use of force or threat of force from the other person. Cutting someone off in traffic does not justify the aggrieved person to assault the at-fault driver.
