Why is it that a lawyer will keep sateing back a court date?

"Sateing"? You mean putting off the court date as much as possible? For the defense, it's usually a good idea. Witnesses' memories fade, the judge will give a better deal to get the case off the docket, the prosecutor gets sick of the case, etc.
