Is there legal precedent regarding the veracity of the testimony of a law officer vs that of the accused? Is the word of a cop impeachable in court?

Yes a cop's word is definitely impeachable. Theoretically, all witnesses are treated equally and the jury instructions say that cops are not to be treated with any more veracity than any other witness. It all depends on how you are going to impeach them versus how the state is going to impeach the accused. Without knowing all the facts there is no way to explain how, when and where to impeach.
