can officer say anything different than he wrote on arrest affidavit when we go to trial?

Yes, it is possible. But you or your attorney should be able to impeach his testimony, by using what he wrote on his arrest affidavit.

Yes, any person who gives a statement can change that statement. That person's prior statement can be used to impeach their credibility but it will be for the jury to determine the impact of the change of statement and thus the credibility of the person
