What exactly does it mean to plea out?

It means to enter a plea of guilty usually in exchange for a sentence better than which you would get after trial.

It means that you enter a plea of either guilty or no contest to the charge. You will be sentenced either to a negotiated plea resolution or by the judge.

Hello: I read your question and the brief answers. They are accurate, but I would add further that you or your atty. usually negotiate with the Assistant State Atty. then tell the judge what you agreed to...and enter the plea. The judge will order the sentence as agreed to by the parties. There are other scenarios, but that procedure is the most common.
