If adjudication is withheld, you are not officially "convicted" of the crime. You are allowed to truthfully testify or otherwise answer that you were not convicted of the crime. However, it is important to realize that for a number of purposes, a withheld adjudication is considered a conviction. For most purposes, you should be okay considering this not to be a conviction unless it is specifically stated, "whether or not adjudication was withheld," or words to that effect.
