Settlement
I would like to know what are the steps that need to be taken in order to settle a case outside of court (lawfully), meaning party to party, rather than having to go to trial.

A special rule in Florida prevents the prosecutor from speaking to you directly without recording the conversation, so you'll probably have to write the prosecutor a letter and ask for an offer or ask when you get to court and appear in front of the judge.
