I am on unsupervised probation in North Carolina but currently live in Florida. Could I go to jail for driving on expired tags in Florida?

Yes, driving on expired tags in Florida is a criminal traffic offense. A new criminal charge, by itself, could land you in jail but it would also violate your probation.
