In Florida, what is the percentage of a sentence that must be served? 85%? Or was it recently lowered to 65%?

100% of a "sentence" must be served. If you are talking about prison time, then with good and gain time, the Department of Corrections can knock up to 15% of the prison time off the sentence. Barring something like automatic early termination of probation, 100% of the fines, probation, and other conditions must be met.
