If i was arressted for explotation of my mother can i file her incapacitated in civil court so she looses her right to defend herself in legal matters against me?

That is like saying you want to steal from your mother, which in itself is bad enough, but that you then want to deprive her of her legal rights for the specific purpose of allowing you to commit further crimes against her. Do you really think that the law would allow you to do such a thing? Of course not, so the answer to your question is no.
