Can I add my son's name to the deed of my place of residence without my wife's knowledge?

If your place of residence is your homestead and you own it as tenants by the entireties, then no. The tenancy by entirety is a separate entity of ownership which can act only with the consent of both spouses. Both tenants must join in any transfer of tenant by the entirety property, and neither spouse may transfer their interest without the other spouse.
