can i give my baby my boyfriend's mother's maiden name?

Why? Not really a "legal" question, but I would call the Bureau of Vital Statistics and ask them if they have perameters to go by. This is a last name I assume. Does she know about this?
It seems it would make the child's life more complicated than it already is.

Not unless it is also the father's name. You can only use your name or his (or both) but not someone else's.
